Couscous, Cucumber, and Corn Salad



I felt very inspired today to make a deliciously colorful salad today and within the space of 10 minutes I whipped up this scrumptious bowl of goodness. With very few ingredients, this salad is a big enough portion for two, and if you are not a vegetarian feel free to add chicken as I did for my boyfriend.

Ingredient:

Half a cucumber
2 Tbsp Feta cheese
1 Tbsp Olive Oil
10 Cherry Tomatoes
1 Pack of Garlic and Herb Couscous
Half Avocado
Small tin of corn
Salt
Pepper

Method:

Cook couscous according to package directions. Shave your cucumber into the bowl, and add drained corn also. Next cut all of your cherry tomatoes in half and add to the bowl. Then cut your avocado in hald, and cut that half into squares. Scoop out the avocado into the bowl and sprinkle mixture with salt and pepper. Next stir in feta and olive oil making sure that the mixture is moist. Once the couscous is done scoop 4 spoonfuls into the bowl making a bed for the salad. Then place your salad mixture on top.
